Additionally, technology can be used to track and communicate the source and production
methods for products sold in-store to ensure customers have maximum transparency in
their food choices.
Community Wellness. Cooperatives are powered by people — like-minded individuals
working together for a collecting benefit. In addition to reducing planetary impact,
Chicago Market should embrace a sense of social sustainability. Communities that are
supported by lifelong education, job opportunities, and stable economic growth tend
to be more equitable and resilient. Being a place of opportunity and inclusivity, Chicago
Market can become a wellness hub for the Uptown community.
Because Chicago Market's permanent store is not yet generating revenue, all SAP recommendations
are focused on creating value by enabling cost savings, leveraging positive returns on investments,
streamlining operations, and supporting meaningful community development.
After the initial SAP recommendations are addressed, Chicago Market can consider additional
strategies that would extend its impact in the future. Tracking scope 1, 2, and 3 carbon emissions
and conducting regular ESG assessments will help Chicago Market avoid material risks and openly
communicate its net impact. Once Chicago Market's Uptown operation is stabilized, it could utilize
its distribution network to provide healthy, local foods to the many Chicago communities lacking
fresh food options.
Successfully implementing the SAP recommendations will require collaboration and developing a
culture of sustainability across all levels of the cooperative. Identifying a "Green Team" to champion
initiatives, celebrate achievements, and engage stakeholders is a way to ensure the work has a
lasting impact.
Chicago Market was established with a vision to help build a more sustainable and transparent
food system for the city. As that vision becomes a reality, this SAP can be used to help deliver on
that promise.
